WORLD’S FAIR BUTTERSCOTCH GLAZED CORN CRUNCH

Makes 3 quarts

INGREDIENTS

3-1/2 quarts (14 cups) popped JOLLY TIME® Blast O’ Butter or JOLLY TIME® Smart Balance® Butter Microwave Pop Corn

1 cup honey-roasted peanuts

1 cup packed brown sugar

½ cup dark corn syrup

½ cup butter

¾ teaspoon ground cinnamon

½ teaspoon baking soda

1 teaspoon vanilla extract

1 teaspoon rum extract

HERE’S HOW

·       Preheat oven to 250˚F. Spray large roasting pan with nonstick spray. Mix popcorn and peanuts in pan.

·       Mix brown sugar, corn syrup, and butter in heavy large saucepan over medium heat. Bring to a boil; boil, without stirring, for 5 minutes. Stir in cinnamon, vanilla and rum extracts; mix well. Pour over popcorn mixture, stirring to coat.

·       Bake about 45 minutes, stirring occasionally, until very crisp. Cool, break into pieces. Store in airtight container.
