How is popcorn made?

Popcorn is a form of flint corn and is different from dent and other soft commercial corn varieties in two ways. The first is that it is almost entirely hard starch. The second is that it has a very hard pericarp that permits the internal pressure and temperature to rise high enough to pop.

Our extended family of Midwest farmers agree to plant the popcorn seed we provide them each spring, take care of it during the growing season and carefully harvest it in the fall. Then it is slowly dried to the optimum moisture and finally sent through a cleaning mill immediately prior to packaging.
